The Green,The Red, The Purple

Ever wondered why the birds eat the most colourful and ripest fruit before you can get to it. Or, why the bees and the butterflies are attracted to the most colourful flowers?
Might this not be natures way of cueing which contain the best nutrition?

Always choose the greenest, reddest most purple when you are shopping for fruit and vegetables.

It is the avocado,the green beans, the spinach, broccoli,peas, courgettes/zucchini, tomato and aubergine that we should be looking at in terms of vegetables.

The dark plumbs, strawberries,raspberries, blackberries, blueberries, dates, apricots, galia melons, pomegranates that we need to concentrate on as or fruits of choice.

Courgette Pancakes with Smoked Salmon

No need for high fat butter or syrup with these flavourful courgette pancakes with smoked salmon. Pair them with a tossed salad for a heart healthy brunch or light lunch.

Ingredients
2 eggs
1-1/2 Tbsp olive oil
1/2 cup skim milk
1-1/2 cups self-rising flour
2 oz smoked salmon, chopped
2 large courgette, roughly grated
1 Tbsp chopped fresh dill plus sprigs for garnish
black pepper
1/4 cup fat free sour cream for garnish

Preparation
In a large bowl, combine eggs, olive oil and milk, and stir until blended. Add flour and whisk until smooth. Stir in smoked salmon, courgette, dill and pepper (to taste).
Coat a large frying pan with nonstick cooking spray or wipe with a little light olive oil and heat over medium heat.
Pour batter by rounded tablespoonfuls onto skillet and cook 2 to 3 minutes, or until bubbles appear on top.
With a spatula, flip pancakes and cook another 2 to 3 minutes, or until lightly browned. Remove from frying pan and keep warm. Repeat with remaining batter, coating frying pan with nonstick cooking spray/ light olive oil between each batch.

Serve warm garnished with a dollop of creme fraise and dill sprig.

Beetroot with Cumin and Feta

Beetroot with Cumin and Feta

5 medium beetroot
½ a standard block of feta
½ teaspoon cumin seeds
Olive oil
Balsamic vinegar

- Peel and slice the beets into 1cm (ish) slices. Cook the beets in boiling water until just tender (or steam, which would probably be nicer).
- Allow the sliced beets to cool and spread on a serving plate.
- Drizzle with olive oil and balsamic vinegar and sprinkle over the cumin seeds.
- Crumble over the feta and serve.

Body Image team is three months in on a nine month journey. Tania Blom is making use of Cognitive Behaviour Therapy ( CBT ) to drive the changes in the teams relationship with food. resulting in the team seeing food as fuel and not as a comfort or friend or confidant anymore.

The Terrific Transformations forum has become the friend confidant, emotional support and the seat of many new friends as we concentrate on healing the body and mind while we teach the body to burn the fat around the organs as well as on other sites in the body.
